The history of wine at Château Canadel dates back to Roman times, as evidenced by the remains of wine presses found during excavations that preceded the construction of the winery. Subsequently, the estate was owned in turn by the Abbey of Saint-Victor de Marseille and the Counts of Provence until the end of the Middle Ages.

The estate's bastides were built one after the other, between the 13th and 15th centuries.  The first buildings, used exclusively for agricultural purposes, were joined by dwellings and a chapel, built around the ponds and water reservoirs that cross the estate. Vines are grown on south-facing terraces, sheltered from the Mistral and protected from the sea by the Gros Cerveau massif.
After the phylloxera epidemic that ravaged French vineyards at the end of the 19th century, the estate was replanted. The Saint-Aubyn family, originally from England, bought and consolidated the estate in the 1960s. The vines were then cultivated for the Ott estates.

In 2007, Jacques and Caroline de Chateauvieux, industrialists originally from La Réunion, fell in love with this "paradise on earth" and bought the estate with the aim of producing Château Canadel wine, and establishing their family here, back from La Réunion."
